Weight Watcher Jerk Chicken Recipe

Ingredients
  • 1 tbsp oil .
  • 1/2 tsp low sodium soy sauce .
  • 1 1/2 tsps coriander .
  • 1/2 tsp cinnamon .
  • 1 tsp oil .
  • 16 oz boneless chicken breasts .
  • 1/4 tsp nutmeg .
  • 1/2 jalapeno pepper, minced .
  • 1 tbsp allspice .
  • 2 oz dry red wine .
  • 2 tbsps scallions, minced .
  • 1 garlic clove, minced

Directions
  • Step #1 In a small bowl, mix all ingedients except chicken until mixture forms a paste (or in a food processor/blender).
  • Step #2 Rub chicken evenly with spice mixture; cover & put in the fridge at least 8 hrs, preferably overnight.
  • Step #3 Preheat broiler.
  • Step #4 Broil chicken on rack 10-15 mins, turning once, until cooked through.
