Vanilla Panna Cotta With Mixed-berry Compote Recipe

Ingredients
  • 1 c sugar .
  • 1/3 c sweet white wine (such as Moscato) .
  • 1/4 c cold water .
  • 2 pints berries (such as raspberries, blueberries, blackberries, & strawberries, I use frozen) .
  • 2 1/2 tsps unflavored gelatin (from 2 packages) .
  • 1 1/2 tsps vanilla extract .
  • 3 c whipping cream

Directions
  • Step #1 Panna Cotta:.
  • Step #2 Pour 1/4 c cold water into small custard c.
  • Step #3 Sprinkle top gelatin over.
  • Step #4 Let stand until gelatin softens, about 15 mins.
  • Step #5 Bring 1 inch of water in small skillet to boil.
  • Step #6 Place c with gelatin in water.
  • Step #7 Stir until gelatin dissolves, about 2 mins.
  • Step #8 Remove from heat.
  • Step #9 Combine cream & 2/3 c sugar in heavy medium saucepan.
  • Step #10 Stir over med-heat/flame just until sugar dissolves.
  • Step #11 Remove from heat.
  • Step #12 Mix in vanilla & gelatin.
  • Step #13 Divide pudding mixture among 8 wineglasses.
  • Step #14 Cover up & chill until set, at least 6 hrs & up to 1 day.
  • Step #15 Compote:.
  • Step #16 Combine berries & remaining 1/3 c sugar in medium bowl.
  • Step #17 Crush berries slightly with back of spoon.
  • Step #18 Mix in wine.
  • Step #19 Let compote stand until berry juices & sugar form syrup, stirring often, at least 1 hr & up to 2 hrs.
  • Step #20 Spoon compote over puddings.
  • Step #21 Makes 8 servings.
