Carrot & Ginger Soup Recipe

Ingredients
  • 5 c vegetable stock .
  • 1 sweet potato .
  • 2 garlic cloves, peeled & minced .
  • 1 c soy milk (or Heavy Whipping Cream) .
  • salt .
  • 1 leek .
  • 1 c cooked rice, cooked (white, jasmine or brown if preferred) .
  • 2 tbsps fresh gingerroot, grated .
  • 2 lbs carrots .
  • white pepper .
  • 1/2 tsp curry powder or nutmeg .
  • 2 tbsps unsalted butter

Directions
  • Step #1 Cook the rice first.
  • Step #2 In a small saucepan, bring 1-1/4 c water to a boil.
  • Step #3 Add 1/2 c of dry, white rice.
  • Step #4 Cover uped & let simmer for 15 mins or until grains are tender & water is mostly gone (longer for brown rice).
  • Step #5 Trim off the tough green end of leek, then slice leek lengthwise & rinse out.
  • Step #6 Slice leek halves into 1/4-inch slices.
  • Step #7 Trim carrots, wash & slice diagonally.
  • Step #8 Peel sweet potato & cut into 1-inch cubes.
  • Step #9 Melt butter (can use oil) in the soup pot & saute the leek until translucent but not brown.
  • Step #10 Add carrots & sweet potatoes & toss for 2 mins on medium heat.
  • Step #11 Add the garlic, ginger, stock & rice.
  • Step #12 Bring to a boil, then lower to a simmer.
  • Step #13 Cover up & cook carefully for 20 mins or until the carrots are soft.
  • Step #14 Puree the soup in a food processor/blender or with a hand-held whisk.
  • Step #15 Add salt & pepper to taste.
  • Step #16 When serving, put one tbsp of soy or heavy cream in the middle of the bowl, & give it a gentle swirl.
