Special Fried Rice Recipe

Ingredients
  • 1 tbsp sliced roasted cashew nuts (to garnish) .
  • 1 c long grain white rice .
  • 1 c shredded lettuce .
  • 1 pinch caster sugar .
  • 2 tbsps light soy sauce .
  • 4 spring onions, finely sliced .
  • 1 c sliced cooked chicken .
  • 1 garlic clove, crushed .
  • 1 egg, beaten with .
  • 1/2 c frozen peas, thawed .
  • 3 tbsps peanut oil .
  • 1 pinch salt .
  • 1 c peeled cooked shrimp .
  • salt & freshly ground black pepper

Directions
  • Step #1 Rince the rice in two to three changes of warm water to wash away some of the starch.
  • Step #2 Drain well.
  • Step #3 Put the rice in a saucepan & add 1 tbsp of the oil & 350 ml water.
  • Step #4 Cover up & bring to a boil, stir once, then cover & let simmer for 12-15 mins, until nearly all the water has been absorbed.
  • Step #5 Turn off the heat & leave, covered, to stand for 10 mins.
  • Step #6 Fluff up with a fork & leave to cool.
  • Step #7 Heat the remaining oil in a wok, add the garlic & spring onions & stir-fry for 30 seconds.
  • Step #8 Add the chicken, shrimps & peas & stir-fry for 1-2 mins, then add the cooked rice & stir-fry for further 2 mins.
  • Step #9 Pour in the egg & stir-fry until just set.
  • Step #10 Stir in the lettuce, soy sauce, sugar & seasoning.
  • Step #11 Transfer to a warmed serving bowl, sprinkle with the sliced cashew nuts & serve as soon as possible.
