4 large red bell peppers or yellow bell peppers, total amount 2 lbs .
1 1/2 tbsps extra virgin olive oil .
salt, to taste
Directions
Step #1 Core & seed peppers.
Step #2 Cut lengthwise into 4 or 5 thick strips.
Step #3 If you're planning on serving the peppers as dippers, just cut them lengthwise through the stem & cut each half pepper into thirds, don't core them, keeping a sliver of the stem intact.
Step #4 Place pepper strips & oil in a bowl & toss to coat.
Step #5 Arrange peppers slices, cut-side up, on a large baking sheet.
Step #6 Sprinkle top lightly with salt & pepper to taste.
Step #7 Roast in a preheated 450° oven for 30 mins or until peppers are tender & slightly browned on the edges.
