Strawberry Shortcake Recipe

Ingredients
  • 1 (7 oz) can reddi-wip whipped cream .
  • 1 tsp vanilla extract .
  • 1 c buttermilk .
  • 3 egg yolks .
  • 4 c fresh strawberries, sliced .
  • 2 c self-rising flour .
  • 2 large eggs .
  • 1 1/2 c whipping cream .
  • 1 vanilla bean, cut into 1-inch pieces .
  • 6 whole good-looking strawberries .
  • 2 3/4 c sugar, divided .
  • 1 c vegetable oil

Directions
  • Step #1 Preheat oven to 350.
  • Step #2 Stir together sliced strawberries & 1/2 c sugar in a bowl.
  • Step #3 Let stand, stirring every once in awhile, for 1 hr.
  • Step #4 Beat 1 & 1/2 c sugar & oil at medium speed w/ electric mixer until mixed.
  • Step #5 Add eggs, one at a time, beating until mixed after each addition.
  • Step #6 Add flour to oil mixture alternately with buttermilk, beginning & ending with flour.
  • Step #7 Beat at medium speed for 4 mins, then beat in vanilla extract.
  • Step #8 Grease a 15 x 10" jellyroll pan & pour batter into pan.
  • Step #9 Bake @ 350 degrees for 28 mins or until a wooden pick inserted in center comes out clean.
  • Step #10 Cool in pan on a wire rack for 10 mins; remove this from pan & cool completely on wire rack.
  • Step #11 Cut cake into 12 rounds w/ a 3" biscuit cutter, & set rounds aside.
  • Step #12 Heat 1 & 1/2 c whipping cream & vanilla bean pieces over medium-high heat in a heavy saucepan, stirring often.
  • Step #13 Bring to a simmer (do not boil), then reduce heat to low.
  • Step #14 Cook for 5 mins.
  • Step #15 Remove from heat, cool in pan until vanilla beans are cool enough to handle.
  • Step #16 Strain cream & reserve vanilla beans.
  • Step #17 Return cream to saucepan & squeeze seeds from vanilla beans into it.
  • Step #18 Stir in remaining 3/4 c sugar, & cook over med-heat/flame, stirring constantly until sugar dissolves.
  • Step #19 Beat egg yolks until thick & pale.
  • Step #20 Gradually stir in the 1/4 of hot cream mixture into yolks; add to remaining cream mixture in pan, stirring constantly.
  • Step #21 Cook over med-heat/flame, stirring constantly, for 5 mins or until mixture coats the back of a spoon.
  • Step #22 Remove from heat & cool in fridge.
  • Step #23 Place 1 cake round on each serving plate.
  • Step #24 Top w/ strawberries & custard.
  • Step #25 Top w/ second cake round & more strawberries.
  • Step #26 Top w/ whipped cream & a whole strawberry.
