Tofu Stuffed Mushrooms Recipe

Ingredients
  • 2 tbsps sliced fresh parsley .
  • 1/8 tsp pepper .
  • 1 lb fresh large mushrooms .
  • 1/4 c sun-dried tomatoes, finely sliced .
  • 1/2 tsp garlic powder .
  • 2 tbsps olive oil .
  • 1 1/3 c firm tofu, finely sliced .
  • 1/2 tsp salt .
  • 2 tbsps breadcrumbs

Directions
  • Step #1 Preheat oven 375°F.
  • Step #2 Line baking sheet with foil wrap.
  • Step #3 Remove stems & chop finely.
  • Step #4 Set aside.
  • Step #5 Place caps top side down on sheet.
  • Step #6 Heat oil in large nonstick skillet over med high.
  • Step #7 Add mushroom stems, tomatoes, tofu, garlic, salt & pepper.
  • Step #8 Cook 5 mins or until tender.
  • Step #9 Stir in parsley & breadcrumbs along with 1 tbsp water.
  • Step #10 Remove from heat & cool 5 mins.
  • Step #11 Stuff caps with 2 tsp each.
  • Step #12 Bake 20 mins or until brown & crisp on top.
