Baked Salmon Provencale Recipe

Ingredients
  • 1 tsp herbal salt substitute (Mrs. Dash) .
  • 4 salmon steaks (3/4-inch thick) .
  • 1 c plum tomatoes, coarsely sliced .
  • 1 c fish stock .
  • 1 tsp olive oil .
  • 1 tbsp garlic, minced .
  • 1 tsp unsalted butter .
  • 1/8 tsp dried sage .
  • 1/4 tsp dried thyme .
  • 2 bay leaves .
  • 2 tsps saffron threads .
  • 9 Greek olives, pitted & sliced .
  • 1/2 tsp dried tarragon .
  • 2 3/4 c white wine

Directions
  • Step #1 Preheat oven to 400F degrees F.
  • Step #2 Wash & pat dry salmon steaks.
  • Step #3 Heat butter & oil In a large-ish Dutch oven over medium-high heat.
  • Step #4 Saute salmon briefly on each side about 1 min.
  • Step #5 Remove salmon to a platter.
  • Step #6 Add saffron, bay leaves, wine, sage, fish stock, olives, garlic, tomatoes, tarragon, thyme, & salt substitute.
  • Step #7 Bring to a boil.
  • Step #8 Lower heat & let simmer for 10 mins, uncovered.
  • Step #9 Add salmon steaks.
  • Step #10 Remove pan from heat & place this in oven.
  • Step #11 Bake until salmon is lightly pink & done to taste (about 10 mins).
  • Step #12 To serve, place salmon steaks on platter.
  • Step #13 Remove bay leaves from sauce & spoon sauce over salmon.
