Crustless Bacon, Spinach & Swiss Quiche - Low Carb Recipe

Ingredients
  • 1/2 c heavy whipping cream .
  • 1 large onion, sliced .
  • 10 oz frozen spinach, thawed .
  • 1 lb bacon .
  • 2 tbsps butter, divided .
  • 1 tsp olive oil .
  • pepper .
  • 6 oz swiss cheese, shredded .
  • 6 eggs .
  • salt

Directions
  • Step #1 On a foil wrap lined pan, cook bacon in 350 degree F.
  • Step #2 oven until crisp.
  • Step #3 While bacon cooks, chop onion & shred cheese.
  • Step #4 Heat 1 tbsp butter & 1 tsp oil in skillet over med-heat/flame.
  • Step #5 Add sliced onion, & stir this to coat.
  • Step #6 When onion turns glossy, add thawed spinach, & stir this to mix.
  • Step #7 Heat about 5 mins, then remove this from heat to cool.
  • Step #8 Remove bacon from oven, & place on a paper-towel lined plate to drain.
  • Step #9 Stir together eggs, salt, pepper & heavy whipping cream in a medium bowl.
  • Step #10 Add in cheese, onion/spinach mixture, & bacon.
  • Step #11 Stir thoroughly to mix.
  • Step #12 Butter a glass pie plate or quiche dish, pour mix in, & pat evenly with a fork.
  • Step #13 Bake in 350 degrees F.
  • Step #14 oven 25-30 mins, or until a knife inserted in the center comes out clean.
  • Step #15 Let rest 5 mins before cutting & serving.
