Orange Date Pumpkin Bread Recipe

Ingredients
  • 2 tsps baking powder .
  • nonstick cooking spray .
  • 7 tsps unsweetened applesauce .
  • 1 (15 oz) can pumpkin .
  • 1/2 c pitted dates, sliced .
  • 1 1/3 c whole wheat flour .
  • 2 c all-purpose flour .
  • 1/2 c sliced walnuts or pecans .
  • 1 tsp ground nutmeg .
  • 1/3 c honey .
  • 1/4 c Splenda sugar substitute, for baking .
  • 3 tbsps cooking oil .
  • 1 c egg substitute or 4 eggs .
  • 1/2 tsp baking soda .
  • 1/2 tsp salt .
  • 1/2 c sugar .
  • 1/3 c orange juice .
  • 1 tsp finely shredded orange peel

Directions
  • Step #1 Preheat oven to 350 degrees.
  • Step #2 Prepare two loaf pans with a light coating oc cooking spray.
  • Step #3 In a large bowl, salt, baking powder, stir this together all-purpose flour, nutmeg, whole wheat flour, & baking soda.
  • Step #4 Set aside.
  • Step #5 In a medium bowl, honey, stir this together pumpkin, egg, applesauce, orange peel, oil, sugar, & orange juice.
  • Step #6 Using a spoon, stir pumpkin mixture into flour mixture just until mixd.
  • Step #7 Take care not to overmix as that will toughen the bread.
  • Step #8 Stir in nuts & dates (or raisins).
  • Step #9 Divide mixture between the prepared pans.
  • Step #10 (Tip: Dates can be quite sticky & hard to chop.
  • Step #11 Give your knife a quick shot of cooking spray.
  • Step #12 Once sliced, mix about 2 tbsps of the flour mixture with the dates to help the bits separate & become evenly distributed in the bread.

  • Step #14 Bake about 50 mins or until a toothpick inserted near centers comes out clean.
  • Step #15 Cool in pans on wire racks for 10 mins.
