Abby's Way Basic Crepes & Filling Recipe

Ingredients
  • 1/2 c cornstarch .
  • 1 c flour .
  • 2 c sugar .
  • 2 quarts fruit .
  • Crepe .
  • warm water .
  • Filling .
  • 1/4 tsp salt .
  • 2 tbsps margarine or butter or oil .
  • 1 1/3 c milk

Directions
  • Step #1 To make the filling: Put the fruit & sugar in a pan, cooking on medium.
  • Step #2 Mix cornstarch & just enough warm water to get rid of any lumps.
  • Step #3 (you can also use the juice from the fruit).
  • Step #4 Add the cornstarch mixture to fruit & continue to cook this until the crepes are cooked.
  • Step #5 Beat eggs slightly & then add all remaining ingredients, beating until smooth.
  • Step #6 Heat crepe pan or a small skillet on medium heat until hot.
  • Step #7 Grease lightly with oil.
  • Step #8 Pour 1/4 c batter into pan, as soon as possible tilting the pan until the batter covers the bottom.
  • Step #9 Cook until the edges start to dry & the center is set.
  • Step #10 Turn over just to brown the other side.
  • Step #11 Garnish with cool whip or ice cream.
