Ingredients
1 c oven-roasted tomatoes, julienned .
16 slices red peppers, julienned 1/8-inch .
16 slices green peppers, julienned 1/8-inch .
1 lb chicken breasts .
Garnish .
2 c alfredo sauce .
1/4 tsp pepper .
1 tbsp fresh garlic, sliced .
1/4 tsp salt .
6 tbsps olive oil .
1 1/2 lbs cooked linguine (12 oz. dry) .
parsley sprigs .
4 tbsps sun-dried tomato pesto
Directions
Step #1 Place chicken breast on grill & season this with salt & pepper & grill until fully cooked.
Step #2 Once chicken is fully cooked, julienne 1/4 inch.
Step #3 While chicken is on grill, place sauté pan on stove & turn flame to medium heat.
Step #4 Place pasta in a pot of boiling salted water & cook to manufacturer's specifications.
Step #5 Allow pan to heat, add oil & place garlic & peppers in pan & sauté carefully.
Step #6 When garlic is cooked, add julienned hot chicken breast.
Step #7 Ladle Alfredo sauce & sun-dried tomato pesto on top of pasta.
Step #8 Toss pasta thoroughly, add tomatoes & bring to a boil.
Step #9 Mix pasta thoroughly so that all pasta is coated with sauce.
Step #10 Transfer pasta to bowl, bringing chicken, peppers & tomatoes to the top for a colorful presentation.
Step #11 Garnish with parsley sprig & a pasta spoon.
Step #12 *If oven-roasted tomato is not available at your market you prepare them at home.
Step #13 Slice 6 roma tomatoes & place on a baking sheet.
Step #14 Spray with olive oil & sprinkle with salt & pepper.
Step #15 Bake for 30 mins until the edges begin to brown.
Step #16 You can remove the skins if you like, but it is not necessary.
