Curried Couscous With Chickpeas Recipe

Ingredients
  • 1/4 tsp pepper .
  • 1 c sliced tomatoes with juice .
  • 1/2 tsp cumin .
  • 1 c couscous (uncooked) .
  • 1 tsp curry powder .
  • 1/4 tsp salt .
  • 1 dash red pepper flakes (optional) .
  • 1 c frozen peas .
  • 2 garlic cloves, minced .
  • 1 tbsp olive oil .
  • 1/2 red sweet bell pepper, sliced .
  • 1 c frozen corn .
  • 1 c canned chick-peas (rinsed & drained) .
  • 1 c chicken broth or beef broth or vegetable broth .
  • 1 medium onion, sliced

Directions
  • Step #1 In a large pot, cook onion, red pepper & garlic in the olive oil over medium low heat until soft, about 7 mins.
  • Step #2 Add tomatoes, corn & spices & continue to cook, peas, chickpeas, stirring every once in awhile for 5 mins.
  • Step #3 Add broth, increase heat & bring to a boil.
  • Step #4 Stir in couscous, cover, remove this from heat & let sit for 6 mins.
