Turkey Enchiladas Recipe

Ingredients
  • 6 whole wheat tortillas .
  • 8 oz fat-free cream cheese .
  • 1 (1 1/8 oz) package enchilada seasoning .
  • 3 c cheddar cheese .
  • 1 (10 1/2 oz) can 98% fat-free cream of chicken soup .
  • 1 (10 1/2 oz) can green enchilada sauce .
  • 1 onion .
  • 1 bell pepper .
  • 1 (10 1/2 oz) can Rotel tomatoes & chilies .
  • 2 lbs ground turkey

Directions
  • Step #1 Cook Turkey in skillet.
  • Step #2 Follow directions on seasoning packet & add to meat.
  • Step #3 Add sliced onions & peppers.
  • Step #4 Cook until veggies are tender & sauce thickens.
  • Step #5 Take the tortillas & spoon a good amount of filling into each tortilla, roll, & place this in a 9 X 13in pan.
  • Step #6 Mix the 3 can goods & cream cheese.
  • Step #7 Pour over the enchiladas.
  • Step #8 Top with Cheese.
  • Step #9 Cover up with Foil.
  • Step #10 Bake at 350 for about 25 mintues.
  • Step #11 Remove foil wrap & melt cheese, about 10 more mintues.
