"oops! There It Is!" Chocolate Cake-low Fat Recipe

Ingredients
  • 1 tsp vanilla .
  • 1/4 tsp salt .
  • 3 tbsps canola oil or vegetable oil .
  • 1 c all-purpose flour .
  • 1 1/4 c packed brown sugar .
  • 1 c low-fat sour cream .
  • 1 tsp baking soda .
  • 1/3 c unsweetened cocoa powder .
  • 1 1/2 tsps baking powder .
  • 2 egg whites .
  • 1 egg .
  • 3/4 tsp cinnamon .
  • 1/4 tsp almond extract .
  • 1/2 c mini chocolate chips

Directions
  • Step #1 Preheat oven to 350 degrees.
  • Step #2 In a small bowl, baking soda, cocoa, baking powder, cinnamon, mix together flour, & salt.
  • Step #3 In a medium bowl, whole egg, mix together brown sugar, egg whites, & oil with an electric mixer over medium speed.
  • Step #4 Add vanilla, almond extract, & sour cream.
  • Step #5 Beat on lowish speed until well mixed.
  • Step #6 Gradually add flour mixture to sour cream mixture, beating on medium speed.
  • Step #7 Fold in chocolate chips with a spoon.
  • Step #8 Spray & 8X8 pan with non-stick spray.
  • Step #9 Spread batter evenly in pan.
  • Step #10 Bake for 40-45 mins, until wooden toothpick inserted in center comes out clean.
  • Step #11 Be sure to chekc cake after 40 mins, as you don't want to overbake it.
  • Step #12 Remove from oven & let cool in pan for 15 mins.
  • Step #13 Cut into 12 squares.
  • Step #14 For maximum moistness, store at about room temp in an air tight container.
