Irish Roast Sirloin Recipe

Ingredients
  • salt & pepper .
  • 3 lbs sirloin tip roast .
  • 2 oz whiskey .
  • 10 oz red wine .
  • 2 tbsps flour .
  • 1 tbsp butter

Directions
  • Step #1 Preheat oven to 180C/350°F Wipe meat, season & place this in a roasting pan.
  • Step #2 Place pan in oven & cook for one hr.
  • Step #3 Add the whiskey & wine to the pan.
  • Step #4 Cook for a further hr, basting once more.
  • Step #5 Remove the roast from the pan, place.
  • Step #6 on a serving dish & keep warm.
  • Step #7 Pour off excess fat from the meat juices, adding water to bring to about 15 oz.
  • Step #8 Beat the butter into the flour to form a smooth paste.
  • Step #9 Add a little of the juices to this & mix well, then pour onto juices, mixing again, & bring to the boil.
  • Step #10 Simmer carefully for 2-3 mins to cook flour.
  • Step #11 Correct the seasoning.
  • Step #12 If the sauce is too thick, add a little more water.
  • Step #13 Serve separately in a gravy boat.
