Stir-fried Rice Noodles With Black Bean Sauce Recipe

Ingredients
  • 2 tbsps black bean sauce, bottled .
  • 1 tbsp soy sauce .
  • 1 tbsp peanut oil .
  • 1 tbsp chives, 5cm lengths .
  • 6 spring onions or green onions, cut into 3cms lengths .
  • 2 garlic cloves, crushed .
  • 2 tbsps sugar .
  • 2 tbsps chinese rice wine (shao hsing) .
  • 1 tbsp fresh gingerroot, grated .
  • 1 tbsp rice wine vinegar .
  • 1/2 tsp sesame oil .
  • 1 kg rice noodles, fresh - 2 cms thickness

Directions
  • Step #1 Heat wok, add oil & stir-fry the garlic, ginger & spring onion for 2 mins or until fragrant.
  • Step #2 Add the noodles & stir-fry until soft.
  • Step #3 Add the black bean sauce, rice wine vinegar, soy sauce, chinese rice wine, sugar & seasame oil & stir-fry until the sauce boils & thickens slightly.
  • Step #4 Serve as soon as possible & garnish with chives.
