Ingredients
  • 7 c small red potatoes, coarsely sliced .
  • 1 c monterey jack cheese, shredded .
  • 1/2 tsp salt .
  • 1 c sharp cheddar cheese, shredded .
  • 1 c onions, sliced .
  • 2 medium tomatoes, seeded & sliced .
  • 1/4-1/2 tsp ground red pepper .
  • 1 (8 oz) carton sour cream

Directions
  • Step #1 In a large saucepan cook potatoes & sliced onion, covered, in a small amount of boiling water for 12 to 15 mins or until tender; drain well.
  • Step #2 Stir in sour cream, salt, cheddar cheese, Monterey Jack cheese, & red pepper.
  • Step #3 Stir in sliced tomatoes.
  • Step #4 Spoon into a 2-quart rectangular baking dish.
  • Step #5 Bake, uncovered, in a 350 degree F oven about 30 mins or until heated through.
  • Step #6 Makes 10 servings.
  • Step #7 To Tote: Cover up tightly.
  • Step #8 Transport in an insulated carrier.
  • Step #9 For 4 to 5 Servings: Prepare using 1/2 the amount of ingredients & the method above, except spoon into a 1-quart casserole.
