Pumpkin Apple Streusel Muffins Version 2 Recipe

Ingredients
  • Streusel .
  • 1/2 tsp cloves .
  • 4 tbsps butter .
  • 1/2 c white sugar .
  • 1/4 c all-purpose flour .
  • 2 1/2 c all-purpose flour .
  • 1/2 c vegetable oil .
  • 2 c peeled cored & grated apples .
  • 1/2 tsp salt .
  • 1 tsp baking soda .
  • 2 c white sugar .
  • 2 eggs, lightly beaten .
  • 1 tsp ground ginger .
  • 1/2 tsp ground cinnamon .
  • 1 tbsp cinnamon .
  • 1 (15 oz) can pumpkin puree .
  • Batter

Directions
  • Step #1 Preheat oven to 350 degrees F (175 degrees C).
  • Step #2 Lightly grease 24 muffin c or use paper liners.
  • Step #3 In a large bowl, sift together 2 1/2 c all-purpose flour, spices, 2 c sugar, baking soda & salt.
  • Step #4 In a separate bowl, mix together eggs, pumpkin & oil.
  • Step #5 Add pumpkin mixture to flour mixture; stirring just to moisten.
  • Step #6 Fold in apples.
  • Step #7 Spoon batter into prepared muffin c.
  • Step #8 For the streusel: In a small bowl, mix together 1/4 c flour, 1/2 c sugar & 1/2 tsp cinnamon.
  • Step #9 Cut in butter until mixture resembles coarse crumbs.
  • Step #10 Sprinkle top topping evenly over muffin batter.
  • Step #11 Bake in preheated oven for 35 mins, or until a toothpick inserted into a muffin comes out clean.
