3 c fresh strawberries, halved except the little ones .
2 tbsps butter .
pastry for double-crust deep dish pie .
1 tbsp flour .
1 c sugar .
milk .
sugar .
3 granny smith apples, peeled & grated .
1 tsp vanilla .
3 c fresh rhubarb, cut lengthwise then sliced into 1/2-inch pieces
Directions
Step #1 In large mixing bowl, slice strawberries & rhubarb & sprinkle with HALF of the REGULAR (white) sugar, set aside.
Step #2 In medium/small bowl, mix rest of sugars, flour, & cinnamon.
Step #3 In small bowl, grate peeled apples, tossing with lemon juice so they don't turn brown.
Step #4 Pour medium bowl mixture & apple mixture along with vanilla into the large bowl of rhubarb & strawberries & fold well til mixed.
Step #5 Pour mixture into pastry-lined 9" deepdish pie plate.
Step #6 Cut up butter & dot evenly.
Step #7 Cover up with second pastry, seal edges well, & flute.
Step #8 Cut slits to vent.
Step #9 Brush top pastry crust with a little milk & sprinkle with sugar.
Step #10 Bake in 375 degree oven for about 50-60 mins til done.
Step #11 Ovens vary so much that this is the best I can tell ya! *Cover up edges with foil wrap if they start to brown too much.
Step #12 ***You may want to set the pie on a foil wrap-lined small cookie sheet to catch any drips if it happens to bubble over a bit.
Step #13 Hot bubbly sugar can create a horrible mess & can really SMOKE! LOL! Best to prevent the fire department coming when the neighbors see smoke coming out the kitchen window! ;).
Step #14 ***If you prefer, you can also use less cinnamon & vanilla -- but we really enjoy a WOW kinda pie ourselves! ;).
