Black Bean Soup Recipe

Ingredients
  • 1/4 c sliced green bell peppers .
  • 3 tbsps sliced carrots .
  • 1 c water .
  • 1 tbsp olive oil .
  • 1 tsp chili powder .
  • sliced green onions (optional) .
  • 1 tbsp minced garlic .
  • 1 tsp dried oregano .
  • 3 (15 oz) cans black beans, rinsed & drained .
  • 1/4 tsp fresh ground black pepper .
  • 1/2 c minced onions .
  • 2 c vegetable broth .
  • 1 1/2 tsps ground cumin .
  • 1/2 c sliced celery

Directions
  • Step #1 Heat oil In a large-ish saucepan over med-heat/flame.
  • Step #2 Add celery, minced onion, bell pepper, & carrot.
  • Step #3 Cook 10 mins or until tender, stirring every once in awhile.
  • Step #4 Add garlic & the next 4 ingredients (through black pepper); saute 3 mins.
  • Step #5 Add broth, water, & beans; bring to a boil.
  • Step #6 Reduce heat, & let simmer 15 mins.
  • Step #7 Cool slightly.
  • Step #8 Puree soup with mixer or immersion mixer.
  • Step #9 Garnish with sliced green onions, if desired.
