Ingredients
  • 500 g tri-colored pasta (bronze dyed pasta) .
  • 6 tbsps balsamic vinegar .
  • 50 g italian tomato paste .
  • 1 bunch spring onions, sliced .
  • 2 red bell peppers, sliced .
  • 200 g low-fat cheddar cheese .
  • 6 tbsps olive oil .
  • 1 red onion, sliced

Directions
  • Step #1 Prepare vegetables.
  • Step #2 Mix all vegetables, olive oil & balsamic vinegar.
  • Step #3 Spread mix on baking tray.
  • Step #4 Sprinkle top with cheese.
  • Step #5 Heat oven to 230°C.
  • Step #6 Cook pasta al dente.
  • Step #7 While pasta is cooking, bake the vegetables in oven for about 10-15 mins.
  • Step #8 Drain pasta, serve on plates.
  • Step #9 Serve vegetable bake on top.
