1 lb boneless pork tenderloins, cut into 1-inch cubes .
2 c sliced mushrooms .
1 c peeled cubed sweet potatoes .
1/4 tsp black pepper .
1 c sliced onions .
1 tsp canola oil .
1/4 tsp crushed red pepper flakes
Directions
Step #1 Heat oil In a large-ish saucepan over medium-high heat; add pork cubes & cook this until browned, about 8-10 mins; add mushrooms, garlic & celery; cook & stir until vegetables are tender, onions, about five mins.
Step #2 Stir in tomatoes, oregano, tomato paste, salt, cumin, ginger root, pepper & crushed red pepper flakes; bring to a boil.
Step #3 Reduce heat to medium-low; cover & let simmer for 45 mins, stirring every once in awhile.
Step #4 Stir in sweet potatoes & okra or zucchini; cover & let simmer another 30-35 mins, until pork & potatoes are very tender; stir in the coriander during last five mins of cooking time.
