Reggae Gumbo Recipe

Ingredients
  • 1 tsp ground cumin .
  • 1/4 tsp salt .
  • 2 garlic cloves, minced .
  • 1/2 c sliced celery .
  • 3/4 tsp dried oregano .
  • 1 tsp grated gingerroot .
  • 1 (5 1/2 oz) can tomato paste .
  • 1/4 c sliced fresh coriander .
  • 1 (28 oz) can tomatoes, undrained, cut up .
  • 1 c sliced okra or zucchini .
  • 1 lb boneless pork tenderloins, cut into 1-inch cubes .
  • 2 c sliced mushrooms .
  • 1 c peeled cubed sweet potatoes .
  • 1/4 tsp black pepper .
  • 1 c sliced onions .
  • 1 tsp canola oil .
  • 1/4 tsp crushed red pepper flakes

Directions
  • Step #1 Heat oil In a large-ish saucepan over medium-high heat; add pork cubes & cook this until browned, about 8-10 mins; add mushrooms, garlic & celery; cook & stir until vegetables are tender, onions, about five mins.
  • Step #2 Stir in tomatoes, oregano, tomato paste, salt, cumin, ginger root, pepper & crushed red pepper flakes; bring to a boil.
  • Step #3 Reduce heat to medium-low; cover & let simmer for 45 mins, stirring every once in awhile.
  • Step #4 Stir in sweet potatoes & okra or zucchini; cover & let simmer another 30-35 mins, until pork & potatoes are very tender; stir in the coriander during last five mins of cooking time.
  • Step #5 Remove from heat & serve.
