Coconut Filled Nut Torte Recipe

Ingredients
  • 3/4 c sugar .
  • 2/3 c shortening .
  • 5 egg whites .
  • Filling .
  • 6 tbsps butter, cubed .
  • 2 1/4 tsps baking powder .
  • 1 tsp vanilla extract .
  • 1 tsp almond extract .
  • 3/4 c butter, softened .
  • 3 c confectioners' sugar .
  • 1/2 c sliced pecans .
  • 1 (5 oz) can evaporated milk .
  • 1/2 c sliced hazelnuts .
  • 1/2 c sliced walnuts .
  • 1 tsp salt .
  • 2 tbsps milk .
  • Frosting .
  • 1/2 c finely sliced almonds .
  • 1 2/3 c sugar .
  • 1 1/4 c milk .
  • 2 (3 oz) packages cream cheese, softened .
  • 1 tsp vanilla extract .
  • 1/2 c finely sliced hazelnuts .
  • 3 egg yolks, lightly beaten .
  • 1 1/2 c flaked coconut .
  • 2 1/4 c flour .
  • pecan halves (optional)

Directions
  • Step #1 In a large mixing bowl, cream shortening & sugar until light & fluffy.
  • Step #2 Add egg whites & extract; mix well.
  • Step #3 Combine the flour, bakign powder & salt; add to creamed mixture alternately with milk.
  • Step #4 Fold in nuts.
  • Step #5 Pour into three greased & floured 9 inch round baking pans.
  • Step #6 Bake at 350 for 20-25 mins or until a toothpick comes out clean.
  • Step #7 Cool for 10 mins; remove this from pans to wire racks.
  • Step #8 In a large saucepan, mix the evaporated milk, sugar, butter & egg yolks.
  • Step #9 Cook & stir over med-heat/flame for 10-12 mins or until mixture is thickened & reaches 160.
  • Step #10 Remove from the heat; stir in the vanilla.
  • Step #11 Stir in coconut & nuts.
  • Step #12 Cool to about room temp.
  • Step #13 In a small mixing bowl, beat butter, cream cheese & vanilla until smooth.
  • Step #14 Gradually add confectioners' sugar.
  • Step #15 Beat in milk until light & fluffy.
  • Step #16 Spread filling between cake layers.
  • Step #17 Frost top & sides of cake.
  • Step #18 Garnish with pecans if desired.
  • Step #19 Store in the refrigerator.
