Flaky Hot Cherry Pepper Biscuits With Cheddar Cheese Recipe

Ingredients
  • 1 tbsp baking powder .
  • 1/3 c vegetable shortening .
  • 3 tbsps cherry peppers, seeded & sliced (the red & green hot pickled variety, not the kind in oil) .
  • 4 slices bacon (cooked crisp & crumbled) or 1/4 c ham (finely sliced) .
  • 1 tsp sugar .
  • 1 1/2 c flour .
  • 1/2 c milk, chilled .
  • 3/4 c sharp cheddar cheese, shredded

Directions
  • Step #1 Preheat oven to 425F degrees.
  • Step #2 Combine flour, baking powder & sugar in food processor/blender.
  • Step #3 Blend in shortening by pulsing on & off until mixture resembles coarse corn meal.
  • Step #4 Put mixture in a medium-sized mixing bowl.
  • Step #5 Stir in cheese, peppers & bacon or ham.
  • Step #6 Add milk & mix until just mixed.
  • Step #7 Turn dough out onto lightly floured surface; knead lightly, about 10 turns.
  • Step #8 Roll or pat dough to 1/2-inch thickness.
  • Step #9 Cut into 2-inch rounds with a biscuit cutter.
  • Step #10 Gather scraps, reshape & cut into rounds.
  • Step #11 Place biscuits on an ungreased cookie sheet 1 inch apart.
  • Step #12 Bake in oven for 12 mins or until golden brown.
  • Step #13 Transfer to cooling rack for 5 to 10 mins & serve hot.
