Vegan Lemon-poppy Seed Muffins Recipe

Ingredients
  • 1/4 c poppy seeds .
  • 1/3 c pure maple syrup .
  • 1 tsp baking soda .
  • 1 c water .
  • 2 tbsps flax seeds .
  • 1/4 c canola oil .
  • 1/2 c barley flour or extra whole wheat pastry flour .
  • 1 tsp vanilla extract .
  • 1/2 c frozen apple juice concentrate, thawed .
  • 2 tsps baking powder .
  • 2 c whole wheat pastry flour .
  • 1/3 c fresh lemon juice .
  • 2 tbsps lemon zest (coloured part only)

Directions
  • Step #1 In a large bowl, mix the flours, poppy seeds, baking powder & soda.
  • Step #2 Stir well.
  • Step #3 Place the flaxseeds in dry mixer & grind into a powder.
  • Step #4 Add 1/2 c of the water & mix till it's a gummy consistency, about a min.
  • Step #5 Add remaining wet ingredients to the mixer, & mix till frothy,except zest, 1-2 mins.
  • Step #6 Stir the zest into the mixed mixture.
  • Step #7 Pour the wet ingredients into the dry & stir just until everything is evenly moistened- Do Not Overmix! The batter will be fairly stiff.
  • Step #8 Immediatly spoon the batter into 12-15 muffin c with papers in them.
  • Step #9 Bake until the "toothpick tester" is clean & the muffins are lightly browned, about 20 mins.
  • Step #10 Serve warm or cool completely on a rack before storing.
  • Step #11 Keep fresh up to 4 days, or they also freeze well.
