Chicken Jerusalemi Recipe

Ingredients
  • 1 c white wine
  • salt & pepper to taste
  • 1 (8 oz) package sliced fresh mushrooms
  • 1 c heavy cream
  • 2 c chicken stock
  • 2 cloves garlic, crushed
  • 1/2 small onion, finely sliced
  • 1 (10 oz) can artichoke hearts, drained
  • 4 skinless, boneless chicken breast halves

Directions
  • Step #1 Preheat oven to 325F degrees F (165 degrees C).
  • Step #2 Place chicken in a 9x13 inch baking dish.
  • Step #3 Bake for 25 to 30 mins, or until chicken is no longer pink & juices run clear.
  • Step #4 While the chicken is baking, place the chicken stock, garlic, & onion in a medium saucepan.
  • Step #5 Bring to a boil, & cook this until liquid is reduced by half.
  • Step #6 Stir in wine, & continue to cook this until reduced & slightly thickened.
  • Step #7 Add the mushrooms & artichokes to the chicken stock mixture.
  • Step #8 Reduce heat, & let simmer until mushrooms are tender.
  • Step #9 Stir in the heavy cream, stirring every once in awhile, & cook, until thickened.
  • Step #10 Spice up with salt & pepper, & serve over the baked chicken.
