4 bunches fresh greens (turnip, collard, mustard, kale or cabbage sprouts) .
1-2 ham hock .
3 tbsps vegetable seasoning (I use "Reunion Foods" Extra Spicy Vegetable Spice uping Mix)
Directions
Step #1 Spray the bottom of your largest stock or soup pot with non-stick spray & brown the ham hocks for a few mins over med-high heat.
Step #2 Add the water to pot & scrape up any brown bits - but leave them in the pot for flavor.
Step #3 Add the sliced turnips.
Step #4 Wash the greens to remove any dirt or sand & chop coarsely (removing large or tough stems.
Step #5 ).
Step #6 Add greens to your pot - you can do this as you chop them & turn heat to medium-low.
Step #7 Stir the greens every once in awhile & add more water as neccesary.
Step #8 Spice up to taste with your greens seasoning mix.
Step #9 Appx.
Step #10 1-3 tbsps per lb of fresh greens.
Step #11 Let simmer, covered, for at least one hr - the longer, the better.
Step #12 Greens should be completely wilted & any stems should be very tender.
Step #13 Remove ham hocks from pot, let cool for a few mins & then remove fat & bone.
Step #14 Chop the meat into small bits & add back to the pot.
Step #15 Adjust seasonings to taste.
Step #16 Serve with hot pepper vinegar to splash over the top.
Step #17 ***if a ready-made greens seasoning is not available - try using salt, pepper, dehydrated onions, garlic powder, paprika, etc.
Step #18 - or your favorite seasoning mix.
Step #19 ***this can also be a vegetarian dish - just leave out the ham hocks - but you might want to add a bit of "Liquid Smoke" to get that smoky flavor.
