Texas Chicken Tortilla Soup Recipe

Ingredients
  • 1/4 c green onions, sliced .
  • 2 (10 oz) cans rotel (mild) .
  • 2 tsps garlic, minced .
  • 1/2 c carrots, sliced .
  • sour cream .
  • 3 c chicken broth .
  • 1 medium onion, sliced .
  • 2 tsps taco seasoning .
  • 1 1/2 lbs boneless skinless chicken breasts, cubed (southwest seasoned, if possible) .
  • shredded Mexican mix cheese .
  • 1 (8 oz) can corn .
  • 1 (8 oz) can black beans .
  • 2 tbsps cornstarch .
  • 1/4 c cold water .
  • tortilla chips .
  • 1 tbsp fresh cilantro, minced

Directions
  • Step #1 In a large saucepan, mix the first ten ingredients; bring to a boil.
  • Step #2 Add chicken.
  • Step #3 Reduce heat; cover & let simmer for 10-15 mins or until chicken is fully cooked.
  • Step #4 Combine cornstarch & water until smooth; slowly stir in theto soup.
  • Step #5 Bring to a boil; cook & stir for 5 mins.
  • Step #6 Top servings with your choice of cheese, crumbled tortilla chips, and/or a dollop of sour cream.
