Halibut Piccata Recipe

Ingredients
  • 1/2 tsp salt .
  • 3 tbsps dry white wine (such as chardonnay or pinot gris) .
  • 1 tbsp drained capers .
  • sliced fresh parsley (garnish) .
  • salt & pepper .
  • 1/4 c all-purpose flour .
  • 1 tbsp olive oil .
  • 2 lemons, juice of (about 1/3 to 1/2 c) .
  • 3 garlic cloves, thinly sliced .
  • 3 tbsps unsalted butter .
  • 1/2 tsp black pepper .
  • 12 oz halibut fillets, about 1 inch thick

Directions
  • Step #1 Preheat oven to 350°F In a wide, shallow bowl, whisk together the flour, salt & pepper.
  • Step #2 Preheat a nonstick saute pan over medium high until hot & add the olive oil.
  • Step #3 Lightly coat the halibut fillets in the seasoned flour (I use Gluten-free mix, rice will also work) & place this in the pan.
  • Step #4 Sear until golden brown, about 1 min per side.
  • Step #5 Flip the fillets to sear the underside, then transfer them to a baking sheet & place this in the oven to finish cooking, about 5 mins more.
  • Step #6 The halibut should be just cooked through.
  • Step #7 Meanwhile, add the wine & lemon juice to the pan, stirring to scrape up any browned bits.
  • Step #8 Add the garlic & capers & cook the liquid over medium-high heat until reduced by two-thirds.
  • Step #9 Remove pan from heat & whisk in butter to create a creamy, piquant sauce.
  • Step #10 Taste & whisk in more butter if desired.
  • Step #11 Spice up with salt & pepper to taste.
  • Step #12 Place fillets on two plates & drizzle each with the piccata sauce.
  • Step #13 Garnish with a sprinkle of sliced parsley.
