Ingredients
3 tbsps onions, finely sliced .
8 large cabbage leaves, blanched .
salt, to taste .
1 tbsp cilantro, sliced .
1 tbsp fresh dill, sliced .
1/2 c white wine (White Zinfandel) .
crushed red pepper flakes, to taste .
2 tbsps extra-virgin olive oil .
1/2 c fish stock or low sodium chicken broth .
fresh coarse black pepper .
1 1/4 c orzo pasta, cooked & cooled .
1/2 lb shrimp, cleaned, deveined & cut .
4 tbsps unsalted butter .
1/2 lemon, juice of .
1 tbsp garlic, minced
Directions
Step #1 Preheat oven to 350ºF.
Step #2 Saute onion & garlic in the olive oil until softened.
Step #3 Add shrimp & cook this until they just turn pink.
Step #4 Do not cook through.
Step #5 Remove from heat & add dill, crushed red pepper flakes, salt, pepper, cilantro, & orzo.
Step #6 Mix well & adjust seasoning.
Step #7 Place a blanched cabbage leaf on a work surface, concave-side up.
Step #8 Place 2 tb of the orzo mixture in the hollow of this leaf.
Step #9 Fold sides of the leaf over the filling & starting with the stem end roll the leaf up around the filling.
Step #10 Place the wrapped cabbage leaf seam-side down in a casserole.
Step #11 Wrap remaining leaves the same way.
Step #12 Pour the wine, lemon juice & stock over the top, cover & bake for an hr.
Step #13 Remove cabbage bundles to a warm serving platter.
Step #14 If a sauce is desired, reduce the liquid in the pan until slightly thickened.
Step #15 Swirl in the butter & serve over the cabbage rolls.
