Thai Tuna Noodles Recipe

Ingredients
  • 1 tbsp peanut butter .
  • 1 tbsp soy sauce .
  • 1 tsp hot pepper flakes .
  • 1 c cilantro, for garnish .
  • 8 oz whole wheat spaghetti .
  • 1 (6 oz) can tuna in olive oil .
  • 1 tsp toasted sesame oil .
  • 1 c bell peppers, sliced (I used mixed colors, frozen) .
  • 3 garlic cloves .
  • 2 tbsps sesame seeds, for garnish .
  • 1/2 tsp salt (to taste) .
  • 1/2 tsp pepper (to taste)

Directions
  • Step #1 Cook pasta according to package directions.
  • Step #2 In the meantime, heat a saucepan on medium-low heat.
  • Step #3 Drain the oil from the tuna into the pan.
  • Step #4 Add crushed & sliced garlic cloves & hot pepper flakes to pan, to infuse flavors into the oil, about 5 mins.
  • Step #5 Increase heat to medium high, & add bell peppers.
  • Step #6 Cook for 2 mins, stirring every once in awhile.
  • Step #7 In a small bowl mix soy sauce, sesame oil, & peanut butter.
  • Step #8 Transfer cooked pasta noodles to the saucepan.
  • Step #9 Add the peanut butter sauce & toss to coat.
  • Step #10 Add the tuna, & toss, breaking up the tuna.
  • Step #11 Spice up with salt & pepper as desired.
  • Step #12 Serve with a sprinkling of sesame seeds & cilantro leaves.
