Summer Tomato Pie Recipe

Ingredients
  • 1 large garlic clove, smashed & minced .
  • evaporated milk .
  • 1 1/2 tsps salt .
  • 4 c sliced firm tomatoes, a mixture of red & green if possible, let them drain well after you slice them .
  • 1 unbaked 9-inch deep dish pie pastry .
  • 1/8 tsp pepper .
  • 1/3 c parmesan cheese .
  • 1/3 c mayonnaise

Directions
  • Step #1 Line pie plate with pastry; crimp edges & brush shell with undiluted evaporated milk.
  • Step #2 Bake at 450 for 5 mins.
  • Step #3 Fill the baked pie shell with sliced tomatoes & sprinkle with salt & pepper.
  • Step #4 Combine mayonnaise, Parmesan cheese, & minced garlic; spread on tomatoes.
  • Step #5 Bake at 350 for 35 to 45 mins, or until tomatoes are cooked & pie is done.
  • Step #6 Note: Let the tomatoes drain well, if they are soft they will make the pie shell soggy.
  • Step #7 Use firm tomatoes.
  • Step #8 Also this is not a dish you want as a left over, it gets soggy in the refrigerator.
