• 1 c cooked beets
• 1 1/2 c sour cream
• 1 c crushed ice
• 1/2 small onion
• 2 tbsps lemon juice

• Step #1 Place sour cream, lemon juice, onion & beets into a food processor/blender or mixer & puree until mixture is smooth.
• Step #2 Add ice or cold water, chill & serve this with a dollop of sour cream on top.
