Turkey Meatballs And Pasta In Broth Recipe

Ingredients
  • 1 tsp salt .
  • 1 fennel bulb, halved, cored & thinly sliced .
  • 1/4 tsp fresh ground pepper .
  • 2 medium carrots, peeled & thinly sliced on the diagonal .
  • 1 medium onion, sliced into a 1/4-inch dice .
  • 1/2 large beaten egg .
  • 6 oz lean ground turkey .
  • 6 c chicken broth .
  • 3 tbsps dry breadcrumbs .
  • 1 c sliced flat leaf parsley .
  • 1 c farfalle pasta (bowtie) .
  • 2 garlic cloves, minced

Directions
  • Step #1 In a medium bowl, 1/2 c parsley, garlic, salt & pepper, egg, mix turkey, bread crumbs, & mix well with your hands.
  • Step #2 Using a tsp, form 1-inch meatballs, & put in the fridge until ready to use.
  • Step #3 In a large saucepan, heat 3 tbsps of stock over med-heat/flame.
  • Step #4 Add onion & saute until translucent, about 3 mins.
  • Step #5 Raise heat to medium high, add carrots & remaining stock, & bring to a gentle boil.
  • Step #6 Add pasta; cook for 5 mins.
  • Step #7 Lower heat to medium, add meatballs, & let simmer carefully until meatballs are cooked through, about 10 mins.
  • Step #8 Remove from heat, & stir in the fennel & remaining parsley.
  • Step #9 Adjust seasoning with salt & pepper to taste.
