Chickpea Curry Recipe

Ingredients
  • 2 tbsps vegetable oil
  • 2 (2 inch) sticks cinnamon, crushed
  • 1 tsp cayenne pepper
  • 1 tsp ground turmeric
  • 1 tsp ground coriander
  • 2 (15 oz) cans garbanzo beans
  • 1 c sliced fresh cilantro
  • 2 cloves garlic, minced
  • 2 onions, minced
  • 6 whole cloves
  • 1 tsp ground cumin
  • 2 tsps fresh ginger root, finely sliced
  • salt

Directions
  • Step #1 Heat oil in a large frying pan over med-heat/flame, & fry onions until tender.
  • Step #2 Stir in garlic, cinnamon, cloves, cayenne, ginger, cumin, coriander, salt, & turmeric.
  • Step #3 Cook for 1 min over med-heat/flame, stirring constantly.
  • Step #4 Mix in garbanzo beans & their liquid.
  • Step #5 Continue to cook & stir until all ingredients are well mixed & heated through.
  • Step #6 Remove from heat.
  • Step #7 Stir in cilantro just before serving, reserving 1 tbsp for garnish.
