Orange Cream Cheese Cookie Cups Recipe

Ingredients
  • 8 oz fat free cream cheese, divided .
  • 1/3 c Splenda granular .
  • 1 tbsp Splenda granular .
  • 2 tsps orange zest .
  • 1 c all-purpose flour .
  • 3 tbsps skim milk .
  • 1 tbsp fresh orange juice .
  • 2 tbsps reduced-calorie margarine .
  • 2 egg whites .
  • 1 tsp vanilla extract

Directions
  • Step #1 Preheat oven to 350ºF.
  • Step #2 Coat two 12-c miniature muffin pans with cooking spray; set aside.
  • Step #3 To prepare cookie dough, In a large-ish mixing bowl mix 2 oz cream cheese, milk & margarine.
  • Step #4 Beat on lowish speed until mixed.
  • Step #5 In a small bowl, mix flour & 1 tbsp splenda.
  • Step #6 Beat flour mixture into cream cheese mixture on lowish speed until mixed.
  • Step #7 Transfer cookie dough to a lightly floured surface & knead carefully 4 times.
  • Step #8 Divide dough into 24 equal portions & press each portion into bottom & up sides of prepared muffin pans; set aside.
  • Step #9 To prepare filling, 1/3 c sugar, in a food processor/blender or large bowl mix remaining 6 oz cream cheese, orange juice, egg, zest & vanilla.
  • Step #10 Blend until smooth.
  • Step #11 Spoon 2 tsps filling into prepared cookie c.
  • Step #12 Bake until filling is set & edges are golden, 20 to 25 mins.
  • Step #13 Cool on wire racks.
  • Step #14 Yields one cookie c per serving.
