Curried Peanut Chicken Recipe

Ingredients
  • 2 tbsps curry powder
  • Hot cooked rice
  • 2 medium red sweet peppers, halved & seeded
  • 3/4 c peanut butter
  • 1/4 c flaked coconut, toasted
  • 1 1/2 c orange juice
  • 4 boneless, skinless chicken breast halves
  • 1/4 c dried currants

Directions
  • Step #1 In a bowl, mix the orange juice, peanut butter & curry powder.
  • Step #2 Pour a third of the marinade into a large resealable plastic bag; add chicken.
  • Step #3 Seal bag & turn to coat; put in the fridge for 8 hrs or overnight.
  • Step #4 Cover & put in the fridge remaining marinade.
  • Step #5 Drain & discard marinade from chicken.
  • Step #6 Grill chicken & peppers over med-heat/flame for 8-10 mins on each side or until chicken juices run clear & peppers are tender.
  • Step #7 Warm the reserved marinade.
  • Step #8 Cut chicken & peppers into 1/2-in.
  • Step #9 strips; sprinkle with coconut & currants.
  • Step #10 Serve with rice & reserved marinade.
