Smoked Mackerel & Mushroom Pilaf Recipe

Ingredients
  • 275 g brown basmati rice .
  • 20 g fresh coriander, roughly sliced (cilantro) .
  • 1 bunch spring onions or scallions, sliced on the diagonal .
  • 350 g smoked mackerel fillets, skinned & roughly flaked .
  • black pepper .
  • 2 tsps walnut oil .
  • 250 g chestnut mushrooms, sliced .
  • 1 tbsp olive oil

Directions
  • Step #1 Cook the brown rice in salted water until tender- for about 25 mins, or according to the packet then drain.
  • Step #2 Meanwhile heat the olive oil In a large-ish frying pan & saute the mushrooms for 3 mins until they begin to soften.
  • Step #3 Add most of the spring onion, saving a small handful for decoration, & cook for 2-3 mins.
  • Step #4 Add the cooked rice & smoked mackerel & heat through for a few mins, stir until evenly heated.
  • Step #5 Just before serving, stir in the the coriander & drizzle with the walnut oil.
  • Step #6 Top with the remaining spring onions & some black pepper before serving.
