Stuffed Green Peppers Recipe

Ingredients
  • 1 tbsp parsley, minced .
  • 1/4 c water .
  • 1 tsp salt .
  • 1 lb lean ground beef .
  • 1 (8 oz) can tomato sauce, divided .
  • 1 onion, finely sliced .
  • 1 1/2 c rice, cooked .
  • 4 large green peppers .
  • 1/4 tsp pepper .
  • 1 garlic clove, minced

Directions
  • Step #1 Wash peppers, remove tops & seeds.
  • Step #2 Place them upright in 2 quart micro-proof casserole.
  • Step #3 Pour water over bottom of dish & cook, covered, on high for 2 mins.
  • Step #4 Drain water.
  • Step #5 Let peppers stand while preparing filling.
  • Step #6 Crumble beef into glass mixing bowl.
  • Step #7 Add onion & cook on high 4 mins, or until meat loses its color, stirring once during cooking.
  • Step #8 Drain fat.
  • Step #9 Stir in garlic, salt, rice, pepper, parsley, & 1/2 c tomato sauce.
  • Step #10 Fill peppers with mixture, mounding on top.
  • Step #11 Replace peppers in casserole & top each with remaining tomato sauce.
  • Step #12 Cook, on high 10 to 12 mins, covered, or until peppers are tender.
