Mocha Meringues Recipe

Ingredients
  • 2 tbsps unsweetened cocoa powder .
  • 1 1/4 tsps instant coffee .
  • 1/4 tsp cream of tartar .
  • 1/4 tsp salt .
  • 1 c sugar .
  • 2 tsps vanilla extract .
  • 4 egg whites, room temperature

Directions
  • Step #1 Take your eggs out of the fridge & allow them to come to about room temp.
  • Step #2 Make sure you have two oven racks in your oven.
  • Step #3 Preheat oven to 250°F.
  • Step #4 In a small bowl, mix vanilla & instant coffee.
  • Step #5 In large bowl (or your mixer's bowl) add egg whites, cream of tartar & salt.
  • Step #6 Beat on medium speed until the eggs are frothy.
  • Step #7 Increase speed slightly & add sugar slowly but steadily.
  • Step #8 Beat mixture until stiff peaks form.
  • Step #9 This should take about 10 mins.
  • Step #10 Add vanilla/coffee mixture & mix until mixd.
  • Step #11 Decrease speed to low & add cocoa slowly until just incorporated.
  • Step #12 Using a pastry bag or ziploc bag with a corner cut off, pipe meringue onto two parchment lined cookie sheets.
  • Step #13 The mounds should be no less than half an inch apart & should each be about an inch across.
  • Step #14 Bake for 30 mins, then switch the two baking sheets from one rack to the other.
  • Step #15 Bake for another 20 mins until the meringues are dry.
  • Step #16 Turn off the oven & leave it slightly open while the meringues crisp for about an hr.
