Eggs Florentine Recipe

Ingredients
  • 40 g grated parmesan cheese .
  • 150 ml creme fraiche .
  • 40 g butter .
  • 6 large eggs .
  • 2 large tomatoes, skinned & sliced .
  • 50 ml double cream .
  • 1 pinch grated nutmeg .
  • 1 kg fresh spinach, washed .
  • 40 g grated cheddar cheese

Directions
  • Step #1 Heat oven to 220°C.
  • Step #2 Melt half the butter & add damp spinach.
  • Step #3 Cover up an cook this until soft.
  • Step #4 Drain & add the tomatoes, nutmeg & seasoning.
  • Step #5 Use remaining butter to grease 6 souffle dishes.
  • Step #6 Divide the spinach into the dishes making a hole in the middle.
  • Step #7 Break an egg into each hole.
  • Step #8 Mix the creams together & spoon over the spinach.
  • Step #9 Top with the cheeses.
  • Step #10 Bake for 12 mins.
  • Step #11 If desired the dishes can be finished under a hot grill for a crispy top.
