Saucy Chickpeas And Sweet Potato Recipe

Ingredients
  • 1 tbsp vegetarian worcestershire sauce .
  • 1 vegetable stock cube .
  • 2 sweet potatoes (appox 7oz/200g each) .
  • 2 tbsps balsamic vinegar .
  • 14 oz canned tomatoes .
  • 2 spring onions .
  • 2 garlic cloves .
  • 14 oz canned chick-peas .
  • 1 small onion

Directions
  • Step #1 Wash the potatoes & prick them with a knife.
  • Step #2 Cook them in an oven preheated to 200°C/400°F/Gas Mark 6 for just over an hr or until soft.
  • Step #3 Start to cook the chickpea sauce about 30 mins before the potatoes finish cooking.
  • Step #4 Finely slice the onion & crush the garlic & fry in a little olive oil with 1 tbsp of balsamic vinegar & Worcestershire sauce.
  • Step #5 Add the tinned tomatoes & stock cube.
  • Step #6 Add the chickpeas & heat them thought, stirring every once in awhile.
  • Step #7 5 mins before serving add the remaining balsamic vinegar & the sliced spring/green onions.
  • Step #8 Mix in well.
  • Step #9 Slice open the potatoes & serve the chickpeas inside.
