Weight Watcher Roasted Lemon And Fennel Shrimp Recipe

Ingredients
  • 8 fresh basil leaves, torn .
  • 1 tbsp extra-virgin olive oil .
  • 1 tsp fennel seeds, coarsely crushed .
  • 1/2 tsp salt .
  • 1 lb shrimp, peeled & deveined .
  • 1/2 tsp black pepper, coarsely ground .
  • 4 garlic cloves, minced .
  • 1 tbsp lemon zest, grated

Directions
  • Step #1 Preheat oven to 500°F Heat a small shallow roasting pan in the oven until hot.
  • Step #2 Combine shrimp, fennel seeds, oil, garlic, lemon zest, salt & pepper in a medium bowl.
  • Step #3 Spread the shrimp mixture onto the hot pan.
  • Step #4 Roast until shrimp are just opaque in the center, 6-7 mins.
  • Step #5 Sprinkle top with basil & serve at once.
