Step #1 In a large bowl, flour, baking powder, baking soda, whisk together cornmeal, & salt.
Step #2 Stir in onions.
Step #3 Combine egg yolk & buttermilk; stir in theto cornmeal mixture until mixd.
Step #4 In the bowl of an electric mixer fitted with the paddle attachment, beat egg whites until stiff.
Step #5 Gently fold into cornmeal mixture.
Step #6 Fill a large deep skillet with 2 to 3 inches oil.
Step #7 Heat oil until it reaches 375° on a deep-fry thermometer.
Step #8 Working in batches, until the hush puppies rise to the surface & are golden brown, drop batter, turning once, 1 tsp at a time, into the oil & cook, 2 to 3 mins.
Step #9 Transfer to a paper-towel-lined plate.
Step #10 Serve as soon as possible.
