Ingredients
6 tbsps butter .
1/3 c sliced fresh parsley .
1 1/2 c finely sliced onions .
1/3 c finely grated parmesan cheese .
1 tsp fresh ground black pepper .
8 large eggs .
1 lb crusty bread (1 loaf rustic white bread) .
4 tsps sliced fresh thyme .
1 large garlic clove, minced .
3 1/2 c heavy whipping cream .
1 lb assorted fresh mushrooms, thinly sliced .
1 1/2 c thinly sliced celery .
1/4 c olive oil .
2 tsps salt
Directions
Step #1 Preheat oven to 375 degrees.
Step #2 Butter 13x9" glass baking dish.
Step #3 Cut bottom crust & shor ends off bread & discard.
Step #4 Cut remaining bread with crust into 1" cubes (about 10 c loosely packed).
Step #5 Place cubes in very large bowl.
Step #6 Add oil, thyme, & garlic; toss to coat.
Step #7 Spread cubes out on large rimmed baking sheet.
Step #8 Sprinkle top with salt & pepper.
Step #9 Bake until golden & slightly crunchy, stirring every once in awhile, about 20 mins.
Step #10 Return toasted bread cubes to same very large bowl.
Step #11 Melt butter in large skillet over medium-heat.
Step #12 Add mushrooms, onion, celery, & bell pepper.
Step #13 Saute until soft & juices have evaporated, about 15 mins.
Step #14 Add sauteed vegetables & parsley to bread cubes.
Step #15 Whisk heavy cream, eggs, salt, & ground pepper in large bowl.
Step #16 Mix custard into bread & vegtetables.
Step #17 Transfer stuffing to prepared dish.
Step #18 SPrinkle cheese over.
Step #19 Can be prepared 1 day ahead.
Step #20 Cover up & put in the fridge.
Step #21 Preheat oven to 350 degrees.
Step #22 Bake stuffing uncovered until set & top is golden, about 1 hr.
Step #23 Let stand 15 mins.
