Lemon Crisp Cookies Recipe

Ingredients
  • 1 tbsp lemon rind .
  • 1/2 tsp ground ginger .
  • granulated sugar .
  • grated lemon rind .
  • 1/2 tsp baking soda .
  • 2 tbsps lemon juice .
  • Topping .
  • 1 c sugar .
  • 1 egg .
  • 1/2 tsp salt .
  • 1/2 c butter .
  • 1 3/4 c flour

Directions
  • Step #1 Cream butter & sugar.
  • Step #2 Beat in lemon rind & juice,.
  • Step #3 Combine flour salt, baking soda, & ginger.
  • Step #4 add to creamed mixture.
  • Step #5 Cover up & put in the fridge until firm.
  • Step #6 Shape dough into cylinder 1 3/4 inch in diameter.
  • Step #7 Wrap in plastic & chill until very firm or freeze.
  • Step #8 Cut into very thin 1/8" or less.
  • Step #9 Place on greased baking sheets.
  • Step #10 If desired sprinkle with topping.
  • Step #11 Bake 375 for 6-8 min until very lightly browned.
  • Step #12 Let cool for 5 min before removing from pan.
