Lemon Crisp Cookies Recipe

Ingredients

1 tbsp lemon rind .
1/2 tsp ground ginger .
granulated sugar .
grated lemon rind .
1/2 tsp baking soda .
2 tbsps lemon juice .
Topping .
1 c sugar .
1 egg .
1/2 tsp salt .
1/2 c butter .
1 3/4 c flour

Directions

Step #1 Cream butter & sugar.
Step #2 Beat in lemon rind & juice,.
Step #3 Combine flour salt, baking soda, & ginger.
Step #4 add to creamed mixture.
Step #5 Cover up & put in the fridge until firm.
Step #6 Shape dough into cylinder 1 3/4 inch in diameter.
Step #7 Wrap in plastic & chill until very firm or freeze.
Step #8 Cut into very thin 1/8" or less.
Step #9 Place on greased baking sheets.
Step #10 If desired sprinkle with topping.
Step #11 Bake 375 for 6-8 min until very lightly browned.
Step #12 Let cool for 5 min before removing from pan.
