Ingredients
1 (16 oz) package bulk sausage .
8 oz shredded cheese four cheese mix (cheddar, Monterey Jack, asadero & Queso Blanco) .
4 c water, divided (1 1/2 c to cook sausage, 2 1/2 c to cook grits) .
ground black pepper .
1 c quick-cooking grits .
1/4 lb butter
Directions
Step #1 In a sauce pot, mash sausage in enough water to make it slushy (about 1 1/2 c).
Step #2 Boil until thoroughly cooked.
Step #3 Strain, reserving broth.
Step #4 Bring 2 1/2 c water & butter to a rolling boil.
Step #5 Add grits & pepper.
Step #6 Cook until tender (about 10 mins) stirring frequently.
Step #7 Add water as necessary to keep a creamy consistency.
Step #8 Add cheese & stir until melted.
Step #9 Add sausage & sausage broth as necessary to keep creamy consistency.
Step #10 Cover up & set off heat for 15 mins.
Step #11 This will allow the grits to absorb more & tenderize.
Step #12 When reheating, add more sausage broth as necessary to obtain proper consistency.
Step #13 Garnish with parsley or cilantro as available.
