Joe's Special Recipe

Ingredients
  • 8 oz mushrooms, sliced .
  • 1 (10 oz) package frozen sliced spinach, thawed & squeezed dry or 8 oz fresh spinach, stemmed & sliced .
  • 2-3 tbsps olive oil or vegetable oil .
  • salt & freshly ground black pepper .
  • 1/4 tsp dried Italian seasoning .
  • 1 1/2 lbs lean ground beef .
  • 1/2 tsp worcestershire sauce .
  • 1 medium onion, sliced .
  • 1 pinch ground nutmeg .
  • 2-4 garlic cloves, minced .
  • 6 eggs, lightly beaten

Directions
  • Step #1 Heat 1 tbsp of the oil In a large-ish skillet over medium-high heat.
  • Step #2 Add the beef & cook, until it is evenly browned, stirring to break up the meat, about 10 mins.
  • Step #3 Using a slotted spoon, transfer the meat to a large bowl, draining & discarding the fat.
  • Step #4 Return the pan to the heat & add another tbsp of oil.
  • Step #5 Add the onion & garlic & saute until golden & translucent, about 4 mins.
  • Step #6 Transfer to the bowl with the beef, leaving as much oil in the pan as possible.
  • Step #7 Add the mushrooms to the pan, along with the remaining tbsp of oil, if needed.
  • Step #8 Cook, until the mushrooms are lightly browned, stirring every once in awhile, about 5 mins.
  • Step #9 Return the beef & onion to the pan with the mushrooms.
  • Step #10 Add the spinach, Worcestershire sauce, Italian seasoning, & nutmeg.
  • Step #11 Cook stirring every once in awhile, for 5 mins.
  • Step #12 Reduce the heat to medium-low & add the eggs.
  • Step #13 Cook, stirring constantly, until the eggs are just set & soft-scrambled.
  • Step #14 Spice up to taste with salt & pepper.
