Sweet Potato Cakes Recipe

Ingredients
  • 25 g butter .
  • 50 g quick-cooking polenta mix .
  • 1 pinch nutmeg .
  • 2 tbsps sunflower oil .
  • 1 medium egg, beaten .
  • 700 g sweet potatoes, peeled & sliced .
  • 1 onion, peeled & sliced .
  • 1 garlic clove, peeled & crushed

Directions
  • Step #1 Cook the sweet potatoes in boiling salted water until tender.
  • Step #2 Drain & mash until smooth.
  • Step #3 melt the butter in a sauce pan & cook the onion & garlic carefully for 10 mins until soft.
  • Step #4 Add the onions to the sweet potato along with the nutmeg & seasoning if desired.
  • Step #5 Mix well & leave to cool.
  • Step #6 Place the egg in a shallow bowl & the polenta in another.
  • Step #7 When the potato is cook enough to handle divide into four & form into cake shapes.
  • Step #8 Dip the cakes in the egg & then the polenta, once done put in the fridge for 30 mins.
  • Step #9 Heat the oil & cook the potato cakes for 4 - 5 mins each side.
